I was really craving a tuna melt, so I made myself this great little lunch, and it was delicious. It’s very easy and quick.
- 1/2 Bell Pepper (sliced vertically)
- 1/2 Can Solid Albacore Tuna
- 1 Tbsp Light Mayonnaise
- Some Lemon Pepper Seasoning
- 1 oz Shredded Colby Jack Cheese
Place the pepper half cut side down in a small microwave-safe dish with a little water. Cover and cook on high for 2 minutes.
Mix tuna, mayo and seasoning together, and then fill the pepper. Top with cheese. Bake in 400 degree oven for 10-15 minutes, until cheese is melted and bubbly.
Eat and enjoy!
