Seafood & Spinach in Creamy Tuscan Sauce

Dinner tonight was inspired by 2 recipes to come up with what I had in mind. It turned out amazing and if you love shrimp, scallops, garlic and sun dried tomatoes you’ll be in heaven like me! The following recipe made enough for my dinner plus 6 more! I love my small portions!

  • 12 oz Peeled deveined medium shrimp
  • 8 oz bay scallops
  • 1 small yellow onion, diced
  • 1 small jar sun dried tomatoes in oil, drained
  • 6 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup 1% milk
  • 3/4 cup tomato sauce
  • 2/3 cup grated Parmesan
  • 3 cups fresh baby spinach
  • Salt, pepper, crushed red pepper to taste
  • 1 Tbsp Olive Oil
  • 1 Tbsp Butter

In a large skillet or wok, melt butter with olive oil over medium high heat. Add garlic and cook for a minute or two until fragrant. Add shrimp and scallops, stir frequently until just cooked through. Remove seafood to a bowl and set aside. Add onion to butter in pan and cook until tender. Add sun dried tomatoes, and reduce mixture slightly. Reduce heat to medium-low, and add cream and milk, stirring constantly. Add tomato sauce. Season with salt, pepper, and red pepper to your liking. Simmer a few minutes to a bring this mixture to a slow bubble. Add Parmesan and mix well, heat through. Add spinach and stir until wilted. Add cooked seafood and stir well. Heat through for a minute or two, then serve.
