Simple Soup of Beans, Bacon & Spinach

Here’s a quick, easy and very tasty soft food option that I threw together last night with on hand ingredients.

  • 1 can Great Northern Beans, drained and rinsed
  • 3 slices Bacon, chopped
  • 1 cup Chicken Broth
  • 3 oz Fresh Spinach, chopped
  • 2 Tbsp chopped green onion
  • 1 Tbsp chopped fresh basil
  • 1 tsp minced garlic
  • salt, pepper to taste

In a small saucepan over medium heat cook bacon pieces, onion, and garlic. Add Beans, chicken broth. Simmer, then use an immersion blender to partially purée. Add basil and spinach, simmer until done.

Makes 2 servings for me. Substitute ingredients to use what you have on hand!
